Overview

Polyvinylpolypyrrolidone (PVPP) is a highly cross-linked, insoluble form of polyvinylpyrrolidone, produced by additional cross-linking of PVP chains to create a three-dimensional polymer network that does not dissolve in water. In food and beverage production, PVPP is used as a selective adsorbent for procyanidins and other condensed tannins that cause chill haze in beer and colour instability in wine. Unlike soluble PVP (E1201), PVPP can be efficiently filtered from a beverage by standard filtration, leaving extremely low residual polymer levels in the final product.

JECFA evaluated PVPP in 1965 alongside PVP and assigned a "not specified" ADI. The cross-linked insoluble structure of PVPP renders it essentially non-absorbable from the gastrointestinal tract, making its safety profile even more straightforward than soluble PVP. In food processing PVPP is used as a fining and clarifying agent and is removed by filtration; it is classified as a processing aid in many regulatory frameworks, meaning it may not always be required to appear on final product ingredient lists.

Polyvinylpolypyrrolidone is approved in the EU as E1202 for beer and wine production and in other markets for similar beverage clarification applications. It is highly preferred over soluble PVP in commercial brewing because its insolubility ensures complete removal, the regenerated PVPP can be reused multiple times with appropriate cleaning, and it has a very high selectivity for procyanidins with minimal co-adsorption of desirable flavour compounds. Consumers of filtered beer and wine are exposed to negligible PVPP residues, and no health concern has been identified at the trace levels that might occasionally remain in finished beverage products.
