Hydroxypropyl distarch glycerol is a dual-modified starch that has been both etherified with propylene oxide (introducing hydroxypropyl groups) and cross-linked with glycerol. The hydroxypropylation reduces retrogradation and improves clarity, while the glycerol cross-linking enhances resistance to heat, acid, and mechanical shear. The combination of both modifications produces a starch with outstanding stability across a wide range of challenging processing conditions, making it one of the most technically capable modified starches for demanding food applications including retorted canned goods, acidified sauces, and frozen convenience foods.

JECFA evaluated hydroxypropyl distarch glycerol in 1981 and classified the ADI as "not specified," consistent with the treatment of the modified starch family as a whole. The hydroxypropyl groups introduced during modification have been thoroughly assessed; they are present at low substitution levels and the propylene glycol released upon hydrolysis is a recognised food-safe compound (E1520).
