Sodium ascorbate (E301) is the sodium salt of ascorbic acid, produced by neutralising L-ascorbic acid with sodium bicarbonate or sodium hydroxide. It provides the same antioxidant functionality as ascorbic acid — free radical scavenging, prevention of enzymatic browning, regeneration of oxidised tocopherols, and reduction of haem iron in meat processing — but with a neutral pH and greater water solubility. These properties make it preferable to ascorbic acid in applications where acidity is undesirable, such as processed meats, certain beverages, and marine products. Sodium ascorbate is also used as a nutritional fortification agent to supply ascorbate without adding acidity to the food matrix.

JECFA has assigned sodium ascorbate the same not-specified ADI status as ascorbic acid, reflecting identical metabolic handling: after absorption, the ascorbate anion is retained and the sodium cation is cleared through normal renal mechanisms. No safety concerns exist at food additive use concentrations. The sodium contribution from typical sodium ascorbate use levels is nutritionally negligible. EFSA likewise imposes no specific ADI, as the substance's safety at food use levels is considered self-evident from the nutrient status of ascorbate.

Sodium ascorbate is authorised under EU Regulation (EC) No 1333/2008 at quantum satis levels in most food categories, and is GRAS-listed by the FDA (21 CFR §182.3731). In meat processing, sodium ascorbate is applied at levels of 300–500 mg/kg to accelerate nitrite curing reactions and serve as an in situ nitrosamine inhibitor — a dual benefit that has made it essentially standard practice in the industry. Its use in that context reduces the amount of nitrite required to achieve full antimicrobial protection, thereby lowering potential N-nitrosamine precursor load. Consumers with very low sodium diets may prefer pure ascorbic acid, but at food additive levels the distinction is nutritionally immaterial.
