Overview
Calcium fumarates are the calcium salts of fumaric acid, used as acidity regulators and calcium-delivery vehicles in food products. They acidify and buffer food systems while simultaneously contributing a bioavailable source of calcium to the product matrix. This dual function makes them of particular value in food fortification applications where calcium supplementation and acidity regulation are both desired — for example, in calcium-fortified beverages, nutritional supplements, and some dairy alternative products.
