A structural polysaccharide (E440) found in the cell walls of fruits, particularly apple pomace and citrus peel, extracted commercially as a natural gelling agent. Used to create the characteristic set texture in jams and jellies, and as a thickener in dairy products and sauces. A soluble dietary fiber; pectin slows sugar absorption and may help lower LDL cholesterol when consumed regularly.
