The tricarboxylic acid (E330) naturally occurring in citrus fruits; commercially produced by fermentation of glucose using Aspergillus niger mold. Widely used as an acidulant, preservative, and flavor enhancer with a clean, tart taste; considered safe at typical food levels by FDA and EFSA. It is a chelating agent that can bind iron and other minerals, slightly affecting their absorption.
