Powder made from roasted and defatted Theobroma cacao seeds; rich in flavanols, theobromine, magnesium, and iron. Natural (non-alkalized) cocoa retains more flavanols, which have demonstrated antioxidant and cardiovascular benefits in clinical studies. Dutch-processed (alkalized) cocoa has a milder, less bitter flavor but significantly reduced flavanol content.
