L-ascorbic acid, the chemically active form of vitamin C (E300); used both as a nutrient and as an antioxidant preservative to prevent oxidative browning and rancidity in foods. In baking it acts as a flour improver, strengthening gluten structure and improving dough elasticity. Safe and beneficial at typical food concentrations; the upper tolerable intake is 2,000 mg/day for adults.
