Sodium bicarbonate (NaHCO₃); a chemical leavening agent that releases CO₂ when combined with an acid (buttermilk, vinegar, cream of tartar) and heat, causing baked goods to rise. Also used as an antacid for heartburn relief; a single teaspoon provides approximately 1,260 mg of sodium. Safe and effective at typical baking amounts.
