A spice from the dried bark of Cinnamomum trees, most commonly C. verum (Ceylon) or C. cassia. Provides cinnamaldehyde, which has demonstrated antimicrobial and antioxidant properties in laboratory studies. Cassia cinnamon (most commonly sold in the US) contains coumarin, which may be harmful to the liver in very large amounts; Ceylon cinnamon has negligible coumarin.
