What to know

A polysaccharide produced by partial hydrolysis of starch (typically corn, wheat, or potato) into shorter glucose chains. Despite a bland or slightly sweet taste, it has a very high glycemic index (similar to glucose), rapidly raising blood sugar. Widely used as a bulking agent, carrier for flavors, and filler in processed foods and sports supplements; provides 4 kcal/g just like sugar.
