Ascorbic acid (vitamin C); water-soluble antioxidant essential for collagen synthesis, immune function, and non-heme iron absorption. Also used as a food preservative (E300) to prevent oxidative browning and rancidity in fruits, meats, and beverages. Safe and beneficial at typical food concentrations; the upper tolerable intake is 2,000 mg/day for adults — far above levels found in food.
