What to know

The most abundant organic polymer on Earth, providing structural support in plant cell walls; used in food as a bulking agent, anti-caking agent, and source of insoluble dietary fiber (E460–E466). It passes through the human gut undigested, contributing to stool bulk and supporting gut transit time. Microcrystalline cellulose (MCC) and carboxymethylcellulose (CMC) are the most commonly used food-grade forms.
