What to know

A disaccharide of glucose and galactose found naturally in mammalian milk. It requires the enzyme lactase to be digested; approximately 65% of the world's adult population has reduced lactase activity (lactose intolerance) after childhood. In dairy products it provides mild sweetness and contributes to browning in baked goods via the Maillard reaction.
