Calcium propionate

Calcium propionate is the calcium salt of propionic acid, a short-chain fatty acid produced naturally during fermentation — it is responsible for the characteristic flavour of Swiss cheese. As a food additive (E282), it is one of the most widely used preservatives in bread, baked goods, and tortillas, where it inhibits the growth of moulds and the rope-forming bacterium Bacillus mesentericus, extending shelf life without noticeably affecting flavour at permitted concentrations.

JECFA evaluated calcium propionate in 1973 and did not establish a numerical ADI, designating it not specified — the most favourable classification, indicating that available evidence found no safety concern at any level reasonably encountered in food. Propionic acid is a normal product of human gut fermentation and is efficiently metabolised by the body.

Calcium propionate is approved in the EU (E282), the United States (GRAS), and across all major global markets. Bread and baked goods bearing this additive are among the safest processed foods from an additive standpoint. Some small studies have explored whether high propionate intake might influence metabolic hormones or childhood behaviour; these findings have not been replicated at the scale required to alter the regulatory consensus. For most consumers, calcium propionate in everyday bread is of no concern.
