Saccharomyces cerevisiae or related fungi; single-celled organisms used as leavening agents, fermentation starters, and flavor sources. Baker's yeast converts sugars to CO₂ and ethanol through fermentation, causing dough to rise; brewer's yeast is used in beer and as a nutritional supplement rich in B vitamins. Generally safe; may cause bloating in individuals sensitive to fermentable carbohydrates (FODMAPs).
