A polysaccharide built from glucose units, extracted from grains, roots, or tubers and used as a thickener, binder, or texturizer. Rapidly digested starches have a high glycemic index, quickly raising blood glucose; resistant starches (found in less-processed forms and cooled cooked starch) function similarly to dietary fiber. Used extensively in soups, sauces, gravies, and processed foods.
