What to know

An essential mineral required for synthesis of hemoglobin (oxygen transport in red blood cells) and myoglobin (oxygen storage in muscle tissue). Added to enriched flour and cereals to prevent iron-deficiency anemia, the most common nutritional deficiency worldwide. Heme iron (from meat) is more bioavailable than non-heme iron (from plant sources); vitamin C significantly enhances non-heme iron absorption.
